Key tasks

Job Summary
Organize, supervise and train all service personnel in the restaurant with a view to providing a personalized F&B experience to the guest.

Duties and Responsibilities
1. Deputize in the absence of the restaurant manager and ensure smooth functioning of the restaurant.
2. Schedule weekly/fortnightly staffs are rotated fairly.
3. Allot daily duties to subordinate staff to meet work existing ensuring equity of work.
4. Conduct daily briefing using it as a vehicle for two way communication, training and corrective action.
5. Attend to guest complaints and ensure guest satisfaction through immediate action.
6. Inspect the mis-en-scene and mis-en-place to ensure the smooth flow of operation.
7. Ensure the maintenance and aesthetic upkeep of the restaurant in close coordination with engineering and housekeeping.
8. Organize the training of staff for meeting the standard of service.
9. Develop restaurant sales through up selling, guest contacts and ensuring good service.
10. Ensure that the restaurant is free from work hazards.
11. Supervise food service with a view to ensure speeds, quality of services and professionalization.
12. Appraise staff performance and recommend rewards to the restaurant manager.
13. Control cost by applying food control principle.
14. Serve beverages according to international practice.
15. Motivate staff through fair leadership.
16. Maintain control the par stock of cutlery, crockery, linen, supplies and equipment.
17. Assist the account department and Restaurant Manager in stocktaking.
18. Hand over lost and found properties to the Housekeeping as per P&Ps.
19. Carry out any other task given by his superiors.
20. Comply with the hotel environmental, health and safety policies and procedures
21. Ensure all work procedures are carried out as per HACCP standards.
22. Daily HACCP record and document keeping.
